      目的 以番茄皮渣为原料, 玉米淀粉为增稠剂, 甘油为增塑剂, 采用流延法制备番茄皮渣/玉米淀粉膜。方法 研究番茄皮渣、 玉米淀粉和甘油含量对番茄皮渣/玉米淀粉膜性能的影响。结果 随着番茄皮渣含量的增加, 番茄皮渣/玉米淀粉膜的抗张强度和氧气透过率增大, 断裂伸长率和水溶性减小, 经番茄皮渣/玉米淀粉膜包裹的油脂的过氧化值减小, 抗氧化性提高; 随着淀粉含量的增加, 番茄皮渣/玉米淀粉膜的抗张强度增大, 断裂伸长率和水溶性减小, 氧气透过率先减小后增大, 经番茄皮渣/玉米淀粉膜包裹的油脂的过氧化值变化不大; 随着甘油含量的增加, 番茄皮渣/玉米淀粉膜的抗张强度减小, 断裂伸长率、 氧气透过率和水溶性增大, 经番茄皮渣/玉米淀粉膜包裹的油脂的过氧化值变化不大。结论 番茄皮渣/玉米淀粉膜的适宜制备工艺条件为番茄皮渣质量分数为2.5%~3%、 玉米淀粉质量分数为3%~4%、 甘油质量分数为1.5%~2%。
英文摘要:
      This research aimed to prepare tomato peel waste-corn starch films by using casting method with tomato peel waste as the raw material, corn starch and glycerol as additives. The effects of tomato peel waste content, corn starch content and glycerol content on the properties of tomato peel waste-corn starch films were explored. The results showed that with the increase of tomato peel waste content, the tensile strength and the oxygen permeability of the tomato peel waste-corn starch films were increased, but the breaking elongation and solubility in water of the films were decreased; the peroxide value of the oil packaged by tomato peel waste-corn starch films was decreased and the oxidation resistance of the oil was improved. With the increase of corn starch content, the tensile strength of the tomato peel waste-corn starch films increased, but the breaking elongation and solubility in water of the films were decreased; the oxygen permeability of the films was decreased first and then increased, but there were no big changes in the peroxide value of the oil packaged by tomato peel waste-corn starch films. With the increase of glycerol content, the tensile strength of the tomato peel waste-corn starch films was decreased, but the breaking elongation, solubility in water and the oxygen permeability of the films were increased and while there were no obvious changes in the peroxide value of the oil packaged by tomato peel waste-corn starch films. The proper preparation conditions of tomato peel waste-corn starch films were tomato peel waste content of 2.5%~3%, corn starch content of 3%~4% and glycerol content of 1.5%~2%.
