      目的 概述超声辅助热泵干燥技术在农产品干燥中的研究进展,旨在为超声辅助热泵干燥技术的工业化应用提供理论指导。方法 对超声辅助热泵干燥技术的作用机理、超声辅助技术对农产品热泵干燥过程微观结构及干燥速率的影响、农产品超声辅助热泵干燥的过程预测以及最终品质等进行论述,并提出改进措施。结果 超声辅助热泵干燥技术的发展极具潜力,目前相关研究仍处于初级阶段,其中研究超声强化效果与热泵干燥间的交互影响以及建立合适的动力学模型预测干燥过程是实现工业化生产的研究新方向。结论 超声辅助热泵干燥技术可有效提升农产品的干燥速率,降低设备能耗,同时可减少干燥产品的营养物质损耗及有害物质产生,提高产品质量,在农产品干燥领域具有广泛的应用前景。

      The work aims to summarize the research progress of ultrasound-assisted heat pump drying technology in agricultural product drying, so as to provide theoretical guidance for the industrial application of ultrasound-assisted heat pump drying technology. The action mechanism of ultrasound-assisted heat pump drying technology, the effect of ultrasound-assisted technology on the microstructure and drying rate of agricultural products during heat pump drying process, the process prediction of ultrasound-assisted heat pump drying for agricultural products and the final quality were discussed. Furthermore, the measures for improvement were put forward. The development of ultrasound-assisted heat pump drying technology had great potential, and the related research was still in the primary stage, in which the interaction between ultrasound enhancement and heat pump drying as well as the establishment of suitable kinetic model to predict the drying process were the new direction of the research to realize the industrialized production. The use of ultrasound-assisted heat pump drying technology can enhance the rate at which agricultural products are dried, decrease energy usage of the equipment and simultaneously minimize nutrient loss and the presence of harmful substances in the dried products. This technology also has the potential to enhance product quality and has broad potential applications in agricultural product drying.
